Born in L'Épine, Champagne, he managed the hotel-restaurant “Aux Armes de Champagne,” also located in L’Épine (on the RN3), until September 2004.
This restaurant was Michelin-starred from 1974 to 2004, for 31 consecutive years.

In 1983, the business also turned to wine sales for private clients; this initiative was a great success and led to the creation of 8 successive shops.

In L’Épine in 1983, then Reims, Beaune, Calais, Metz, Strasbourg, Rungis Halles, and in 2020 once again in L’Épine, along with the launch of an online sales site: www.perardel.fr

Since 2003, creation of GFAs, notably in Nuits-St-Georges, Pommard, Epernay.
The vineyards of the GFV offered are farmed by Champagne DE SLOOVERE-PIENNE in Brugny-Vaudancourt, established for many years.
